Healthier Holiday Party!

I am always looking for recipes to serve at or bring to Holiday parties that DON’T push me way off track with my nutrition. Yes, it is the time of year that we are looking for comfort foods and special treats but what if I shared with you some recipes that taste great and fit in a healthy eating plan!

Here is my menu from my Girlfriend’s party with Healthier Holiday Party Recipes:

Chili Spiced Almonds, Christmas Mini Skewers, Cannellini Bean Dip, Mini Caprese Salad Skewers,Warm Olives – on a Rosemary wreath, Cucumber Bites with Boursin & Cherry tomatoes, stuffed mushrooms

Black Bean, Pomegranate and Avocado Salsa; Mini Hummus & Red Pepper Phyllo Bites; Asian Wonton Cups; Kale Salad with Pomegranate, Orange and Pine Nuts; Corn, Edamame and Quinoa Salad with Lemon-Dijon Vinaigrette; Mini Turkey Meatballs

Mini Chocolate Cheesecakes, Pumpkin Pie Balls, Shakeology balls

Here is one of my favorites:

Black Bean, Pomegranate and Avocado Salsa

Black bean salsa with pomegranate arils and avocado! This festive salsa is perfect for holiday parties!

1 15 oz can black beans, rinsed and drained
2 cups pomegranate arils
1 small jalapeño, minced, seeds removed
1/4 cup red onion, chopped
1/4 cup cilantro, chopped
1 large avocado, diced
2 tablespoons fresh lime juice
Salt and freshly ground black pepper, to taste
Tortilla chips, for serving

In a medium bowl, combine black beans, pomegranate arils, jalapeño, onion, cilantro, avocado, lime juice, salt, and pepper. Gently stir. Serve with tortilla chips.

Note-This salsa is best the day is made.
