Tropical Kale Salad

Tropical Kale Salad With Blueberry Balsamic Dressing

Serves 2 (as main course)

This is a salad that includes a multitude of delicious and healthy ingredients, combines them into a delectable meal!  I have precut Kale salad mixes in place of the Kale in the recipe a few times to make this recipe even easier.  Frozen blueberries work out of season too!  The dressing is good on many different salads. I hope you enjoy this as much as I do!

1 head curly Kale, stems stripped, broken into small pieces and massaged with drizzle of olive oil
1 pint organic strawberries, de-hulled and cut into quarters
1 pint of blueberries
1 yellow bell pepper, diced
¼ c. finely diced red onion (optional)
¼ c. shredded coconut
¼ c. pinenuts, lightly toasted
¼ c. golden raisins (or regular)

Place all ingredients except one handful of blueberries together in a large bowl. Toss with dressing.

Blueberry Balsamic Dressing

Handful fresh blueberries
1 tablespoon Dijon Mustard
¼ c. balsamic vinegar
1 tablespoon Grade B Maple Syrup
3 tablespoons olive oil
½ tsp sea salt
Blend dressing ingredients together in a blender
